2020 Cabernet Sauvignon - Old Oak Vineyard
Old Oak Vineyard // Willow Creek District
This is the first, and hopefully not the last, year we sourced from the magnificent organically farmed vineyard - Old Oak - in the Willow Creek District.
This wine has a sacrilegiously dark red hue. Deeply aromatic with anise and backyard garden green notes up front hit the nose. Earthy, underripe, but bright red, fruit on the palate, with a complex tannin structure, that creates a long finish which makes you sit back, close your eyes and think about the good ol' days.
These grapes were harvested on October 1st, 2020. We fermented 1/3 whole cluster, 1/3 whole berry and 1/3 crushed berry in a single vessel to create a balanced structure and give just the right spice, fruit and complexity to the finished wine. It was fermented for 15 days on skins, pressed, settled and aged in neutral barrels for 16 months. We gave it extra time in the barrel to create balance and promote complexity. Bottled Unfiltered and Unfined.
