2018 Sparkling Counoise Rosé
Honea Vineyard // Los Olivos AVA
These Counoise grapes were picked for Rosé from Honea vineyard, aka Margerum Estate Vineyard.
“Picked for Rosé” meaning - Less ripe grapes = lower alcohol and higher acidity, which helps to keep the balance and structure after the secondary fermentation (read bubble making).
The base wine was fermented in neutral oak for 6 months, bottled and rested en tirage for 2 years. Once our scientific calculations told us aging was done and the secondary fermentation was finished, the wine was disgorged, corked and labeled for our Summer 2021 release. We bottled Unfiltered and Unfined, so you may find some sediment at the bottom of the bottle, which is totally natural and a lil’ crunchy.
Taste freshly muddled strawbs, watermelon jolly rancher, cotton candy lacroix w/ a tajín rim, lemon rind acid tang, rose petal *pop pop*.
